Brew strong espresso and cool completely.
Espresso is room temperature or cooler.

Whisk yolks with sugar until pale, about 3 minutes.
Pale yellow, ribbon stage.

Fold mascarpone into yolk mixture until smooth.

Whip egg whites to stiff peaks.
Holds shape when bowl is turned upside down.

Fold whites into mascarpone mixture in 3 additions.

Quick-dip each ladyfinger in espresso. Arrange in dish.
Moistened through but not soggy.

Layer cream, more dipped ladyfingers, remaining cream.

Refrigerate at least 6 hours. Dust with cocoa before serving.
